Last weekend I had good results with rubbed baby back ribs - one thing I like about rubbed ribs is the way I don't need to plan far ahead and set up a brine the day before; it can be more of a spur-of-the-moment thing. (Boy, there were some knuckle opportunities in that one) I did use a mop, though - when the ribs were about 3/4 finished, I started mopping them with Jim's finishing sauce, mixed 50/50 with beer. As for my knuckles, they actually are scraped and bruised, from an unsuccessful attempt to remove a rear bumper mount from an Oldsmobile in a junkyard. The cheap socket stripped (hush) and kept jumping off the nut (quiet!) and I skinned several knuckles on various sharp edges. I have to heal up before I make another attempt with a better wrench.
