IMNHO water gives peppers an acrid taste. We had a discussion about it here a few years ago and came to no conclusions. As you say (almost) steaming your peppers ain't gonna dry them out fast; so forget the drip pan. Try to keep the temperature below 180degF. It takes a long time to dry them completely, but once you get them imbued with smoke you can finish them off in a dehydrator. For your wet experiments try roasting a chipotle rubbed fowl with a half full beer can in it. -- --- Regards, Cameron.
