Hi all - A while ago (Can you be more specific? Well....no, I can't!) there was a recipe posted here (I think) (well, where else would such a recipe be posted???) that involved layering chopped red chiles in salt, letting them sit at room temp for a week or so, and then adding vinegar. I can't find the damn recipe anywhere. I'm pretty sure I could re-create it from what I just wrote, but I'd like to take another look at it just to be sure. This is one of my favorite ways to preserve small red chiles. It's also a very efficient way to get ridiculously large quantities of red chiles into small jars.
