A side note on books. One of THE best books you can buy if you like to cook (and experiment with your cooking) is written by Shirley O. Corriher. Shirley often is a guest on Alton's show and has often been referred to as a "culinary scientist". She's a master of all trades when it comes to cooking it seems. The title of her book is "Cookwise". It is something ANYONE would enjoy who likes to cook. It is by far my favorite book ABOUT cooking. Notice I didn't say "cook book". It does have recipes included. However, it gets into the how and why of food and cooking food. I actually read it cover to cover as a I would normally read a novel...that's how interesting I found it. If you enjoy to cook and want to be GOOD at particular types of cooking and understand HOW you can modify something (such as bread), read that book.
