Hi Y'all, My first experience with tofu, many china moons ago, was in a chinese restaurant. The first course was a soup consisting of the usual with the addition of chunks of tofu. After figuring out that I couldn't eat the soup with the chopsticks I spooned up a bit of the tofu, not knowing what it was. It tasted for most part like the soup. In fact it tasted exactly like the soup. The texture was soft and silky, like hot jello or to my mind having worked as a kid in my uncle's meat market like hot lumps of coagulated blood. I know... this is gross, but I've opened many a heart, mostly goats and pig hearts sometimes cow, slicing into the cavities and being a kid played with the blood jello. So for me tofu isn't snot. It's blood, at least it is when I have it in soup. We are informed by our experiences and when something new comes along in order to categorize it and put it in it's place, it's proper pigeon hole we have to draw on what we know. Tofu has no shame, it will be anything you want it to be. Except maybe jerky. Hose-A P.S. Did anyone see the meteor shower? It was cloudy here this morning so I missed it.
