Well, thanks for the compliment.  This was actually an experiement for 
a 'food science' class.  Create a product with XXX properties and run 
it past a very (very) basic tasting panel (4 people/ 3 tastings/ballot 
used was very basic too; more details avail. if anyone is truly 
interested).  My goal in the "tofu bavarian cream" was not to replace 
chocolate per se, but to add in some protein content to a typically 
sinful dessert.  Mind you, on one hand I think such 'experimental food' 
is about as ridiculous as can be: it's a *dessert*, dammit!  On the 
other hand, it was a major portion of my grade for the class and I 
figured I'd go extreme since I find much of food science to be silly 
(and often destructive...rant/rave/etc).  The short of it is, the only 
tester who was consistently 'okay' with the dessert was a vegetarian 
who had a taste for soy.  I deliberately didn't mask the soy completely 
by adding a ton of chocolate (uber-ridiculous), but just got it to 
where I thought it tasted good.  And it did.  Other 3 panelists weren't 
so sure.  Also very hard to get a consistent product due to various 
factors.  Blah blah blah...

Anywho....my whole point for sending this email is that another guy 
made tofu ice cream.  Vanilla flavored, but it was excellent.  Great 
mouthfeel and good flavor.  His panelists overwhelmingly chose this 
over a medium quality commercial ice cream. I need to track him down 
and get the recipe.  I think his 'point' was to cut out some of the fat 
from milk/cream, so maybe it was a swap in that manner.  Naturally, 
some nice hab powder included is what's on my mind (still thinking 
about that peach hab ice cream from OF......maaaaaan i can envision 
some group ice cream eating scenes, yup...

Anyway, tofu does seem to be quite versitile, but much of food is, IMO. 
  Ya just gotta get in the kitchen and PLAY :)
