[CH] Last Night's Dinner - Fajita Turkey

This was last night's dinner. Quick Fajita Turkey. I
used a very mild chile powder as I was trying to break
my 7 year old into chiles, slowly. No complaints from
his end. He ate all 8 bites without pulling teeth. He
loves poultry. The zucchini was another situation all
together. I guess Like Father, Like Son.
Anyway, here is what I did:

Quick Fajita Turkey w/Grilled
Vegetables

1 lb turkey cutlets
Marinade:
1 tbsp New Mexican chile powder
1 tbsp fresh cilantro -- chopped
1 tbsp brown sugar substitute -- *
see note
1/2 tsp black pepper
1/2 tsp ground cumin
salt -- to taste
Grilled Vegetables:
1 yellow bell pepper -- sliced
1 zucchini -- in long horiz
slices
1 red onion -- in 1/2" slices
2 tbsp olive oil
1 tbsp balsamic vinegar
1/2 tsp black pepper
1/2 tsp salt
In small bowl, combine chile powder, cilantro, brown
sugar subs, pepper and cumin. Whisk to combine.
Rub mixture into turkey cutlets. Let marinate for 1
hour in refrigerator.
Preheat George Foreman Grill. When hot, spray with
nonstick spray. Place turkey cutlets on grill and
close top. Cook for 4 minutes. Check for doneness. If
so, remove. If not, cook for 1 more minute.
Serve with grilled vegetables.
For vegetables:
Slice peppers into long strips, and make sure to cut a
small slice off one side of the zucchini before
slicing it horizontally.
Coat the grill with nonstick spray and preheat for 5
minutes.
In a small bowl, combine oil, vinegar, pepper and
salt. Place the vegetables on the grill and sprinkle
with the oil mixture. Grill for 6-8 minutes until they
are browned and tender-crisp.

NOTES : Risa's notes:
* I used Sweet & Low Brown Sugar Substitute. I found
it in the baking aisle of the supermarket, near the
sugars. It cannot be found in all supermarkets (I
checked 3). It is a bit sweeter than the normal stuff,
so use a bit less.
If you don't need to use substitutes, use the real
thing - light brown sugar.
