Curt...my wife's grandmother was very Scottish, and here is an adaptation of her stuffing recipe, which in turn, was an adaptation of haggis! Marie has further refined it over the years, and although we are not vegans, this is. However, if it is going into a turkey? Vegan?? Oh yeah, that Tofu Turkey that was around last week! Here then,it is: Marie's Oatmeal Stuffing 1 small onion, peeled and chopped fine 1/2 cup chopped mushrooms 1/4 cup diced celery 1/4 cup chopped serrano chile, or hab if you wish 1/4 cup butter, or hard marg or oil of choice 1/2 tsp poultry seasoning 2 tsp sage 2 heaping teaspoons freshly ground black pepper 1/2 tsp OR MORE ground chiles 1 cup rolled oats(NOT instant) 1 cup coarse dry breadcrumbs salt to taste In a bowl large enough to hold it mix the oats and breadcrumbs together well with all the dry ingredients. Simmer the veggies in the butter, oil, etc. until transparent, and add to the dry stuffing, mix this in until well combined, then add cold water to make it moist but not wet. Stuff the bird with this, or place in a foil package and put in oven about half way through turkey cooking time. Make sure there is LOTS of freshly ground black pepper in this stuffing!
