Hi All -- Hope everyone is looking forward to a good holiday. My wife and I tend to shy away from highly processed food, although there are some items that we really love and do have from time to time (Velveeta comes immediately to mind). Another one is this casserole that my wife learned how to make from a co-worker while we lived in New Mexico. We have tweaked the recipe some over the years, and it is one of our favorite "quickie" meals. Perfect for such a busy time of year. Chicken - Green Chile Casserole 1.5 lb leftover cooked, shredded chicken (last night we used deep fried turkey from the freezer) Roasted, peeled, chopped green chiles to taste (the recipe originally called for NM chiles, which we can't get here -- last night, we used 3 poblanos, 3 Hungarian wax, and 6 large jalapenos) 2 cans cream of chicken soup 1 can chicken broth 1/2 cup (or so) sour cream 1/2 lb shredded jalapeno jack cheese 1/2 lb shredded Cabot habanero white cheddar 15 or so corn tortillas (varies depending on size, thickness, etc.) Mix chicken, chiles, soup, broth, and sour cream in a large bowl. Add hot sauce, salt, and pepper to taste (it should need very little, if any, salt). Using a big Pyrex dish, place tortillas on the bottom, cover with sauce, cheese, and repeat until all is used. You should finish with tortillas on top covered by a generous amount of cheese (so that tortillas don't dry out). Cover with greased foil and bake for 30-45 minutes at 350 until bubbly. Remove foil and leave in oven until top browns -- another 10 minutes or so. Let rest for 5 minutes and serve with a nice vinegary hot sauce to cut the richness.
