Along somewhat similar lines - Several months ago I peppered up a jar of pickle slices (made to go in sandwiches). This used my basic technique of getting a jar of pickles, brand/style of choice, and adding some slivers of fresh hot pepper(s) of choice, then waiting. So I had these peppery pickles, and some leftover catfish fillet, some bread and some mayo. I love tartar sauce on a fish sandwich. I diced up a few of the pickles (and a few sweet pickled jalapeno slices) and mixed them with mayo in a small food procesor. Result: easy-to-make peppery tartar sauce. FWIW my mom also does marinated mushrooms, but in a different style. I think I have the recipe in an OSU faculty wives' cookbook, but I need to watch her do the whole procedure sometime.
