That's too much wine.  Use 1 cup at the most for one lb. of cheese.

Instead of putting chiles in the fondue (which is fine, but my kids prefer
theirs without), just finely chop a bunch of your favorites and dip your
fondue covered bread in the chopped chiles before eating.
