Tomatillos make great salsa!  My cousin  and I get a basket every year and cook them down to make wonderful green salsa.  I have recipes somewhere if you don't, but you use the same recipes as you would for green tomatoes, or red tomatoes either for that matter.  They are quite tart, a bit of white sugar helps to cut that and be generous with salt.  They have a papery outer skin that you discard, and then wash them really well as it leaves a sort of slimy coat on the fruit underneath.
