Dried chiles, heated in oil to 225F and held there for 15 or 20 minutes will
keep a good six months at room temperature.  With garlic, one needs to be
more careful.

As a side note, I recently saw some chiles packed in vinegar in decorative
bottles in a local drugstore.  They were on clearance, so I was going to buy
a bottle.  Upon closer inspection, these things have a small tag on them
that says, "For decorative use only.  Do not eat."  So....just be careful
with what you buy, I suppose.

Similar thread, I have seen on the list differing arguments for and against
Chillies bottled in oil. Over here in Oz it is pretty common to see these
for sale. Is it dangerous or not?
