I LOVE cayenne hot sauce. And, I agree, Red Devil is my favorite too. What makes the "Tabasco" brand zing is the aging process...the mash. I have been known to sniff out the older bottles in local groceries where I know people don't buy the stuff. My wife thinks I'm nuts. But, think of it this way...the process of mashin' the peppers is VERY similar to making kraut...and kim chee (the only difference between kraut and kim chee is the amount of brine and the ingredient of chiles). I love kim chee, but I don't eat much, just a piece or two....if you pig out on that stuff exclusively, well, it's like combining flame with methane gas...hmm, wait, you ARE! ;) Ahem, anyway.... "fresh" kim chee is good. But, if you let it sit in the fridge for a while, it gets a bit zingier and hotter. ;) Or, if you buy the "aged" kim chee in an oriental grocery (big ol' vats of stuff) it's gooooooood! I will say this. I use a bunch of tabascos for the first time last fall (thank you Sir Jim for Open Fields, long live Brother Jim!). I didn't mash my peppers, I used them fresh. Boy do the fresh tabascos hae a different flavor than the mashed stuff. You do taste a difference. I love to experiment. But, I'll say this, I love cayenne hot sauce. I make a lot of hot sauce each fall and every time I come home from the store with more hot sauce, my wife think's I've lost more nuts and bolts from my head! "Why did you buy that?! You ALREADY have your own shelf in the fridge!" hehehehehehe I do admit, however, I think "what tastes best" is all a matter of opinion strictly dictated only by the taster's tastebuds.
