I saw something along these lines on (I hate to admit it) Martha Stewart's
show.  She was at a bakery in NYC.  They also sold sandwiches and such.  The
owners took over the roof space & added greenhouses.  The excess heat from
the ovens was vented to the roof to heat the greenhouses.  It was pretty
cool!  They had all sorts of tomatoes & greens to use fresh on their
sandwiches, etc.  The tomatoes were trained  onto wires that ran from the
soil level to the roof.  The tomatoes would grow up to the roof of the green
house, then they would lower the wires to the ground & let the tomatoes keep
growing up the wires.  It was fascinating.
