Mary Anne asked me to please post this for her as she can't post from her Mac, it posts in html. So here goes... Thai Garlic Bread I love this, as Thai food is an absolute favourite. It is so easy to make, and adds a great alternative for a BBQ fare. Try this idea with any of your favourite herbs and spices mixed with olive oil. (Serves 4) 1 French loaf or Chiabatta Bread 4 Cloves garlic 3 Lemon Grass Stalks 1 Teaspoon freshly grated ginger 2-6 Red Thai Dragon Chiles 1 Tablespoon olive oil 1 Tablespoon sesame oil 1 Lime Large handful fresh coriander leaves I love garlic bread, and by just adding these few Thai herbs and spices it gives a real kick to the original classic. Take your loaf of bread and cut in half. Use a blender for all of the above ingredients, or you can chop very finely by hand. With the lime, you can add the zest of the skin to give a little more flavour. If you do not have sesame oil you can use 2 tablespoons of olive oil. Now when you have the mixture spread evenly on the bread. You can use a pastry brush as you do not want this to go on the bread too thickly. You can cook this 2 ways. The first way is to place the coated 2 halves of bread back together and wrap in foil. Cook this in your oven at 190 for 10-12 minutes.
