Interesting time for you to post this link, Risa - I made Rick Bayless' Chipotle Chilaquiles for dinner last night and had the leftovers for lunch today. It was my first foray into chilaquiles, and I was quite pleased - true Mexican "comfort food". The recipe that he gives in "Mexico: One Plate at a Time" is slightly different than that given in your link. In his book, he calls for chipotles en adobo instead of chipotle Tabasco, epazote instead of cilantro/parsley, queso anejo rather than Monterey Jack, and the entire dish is finished on the stovetop. There are additional garnishes and the proportions are slightly different, but I think that the results would be largely similar - overall, a fantastic meal. Matt --------------------- T.
