Here's one I think y'all will like. Tried this today at work with two habaneros, kept the non-CH's at bay and would probably be just right for our moderate core, but the extremists among us will probably want to use at least four. Cut up peaches in 29 oz can (use Osage brand if you can find em) and pears in 16 oz can (any brand). Combine with juice from each and chopped habaneros to taste and cook slowly (just barely at boiling) for ten minutes. Mix in enough corn starch to make the mixture thick. Pour into 9 x 13 baking pan, cover with a white cake mix, and drizzle 1 stick melted butter/margarine over the top. Bake at 350 for one hour. Good served hot straight from the oven or chilled overnight. You can also dust the top with various nuts (almonds, pecans, etc) before baking if you like. Also experiment with various spices (nutmeg, cinnamon, allspice, cloves) in the butter mixture. With apologies to my dear departed mother whose original recipe called only for cherry pie filling, cake mix and the butter. I just couldn't leave it alone. Fred the habaneronut
