Never tried this before, I'm in Madison for the hotluck weekend, getting online at a computer in the town library. Last night was fun, a little more low-key than some years. We did, however, have the mandatory thunderstorm. Ah, Spring. I checked in at the winery this morning, and Steve was just putting a 30-pound chuck into the smoker. Anyway, about hot tartar sauce - I made a small batch quite easily. One thing I like to do is heat up a jar of commercial pickles by adding some fresh hot pepper and letting it rest for a few days at least. The result is whatever pickle flavor you started with (Clausens are my favorite) plus whatever pepper heat you added. To make a simple tartar sauce, dice up some hot pickles and mix them into mayonnaise. Done. Now, I'm off to Clifty Falls State Park, where my tent waits at site 12.
