Hi all
Im trying to make a tabasco style sauce but am aware that there is a process of creating a mash and fermenting it.
How is this done, and does anyone have any good recipes and techniques they could share?

After talking to a few folks, I'm going to make some candy out of
jalapeno flakes (that's all I'll make at the moment).

Also, there's a place I've just discovered here in Indy.  They are
opening a place somewhere in Greenwood and soon in Avon at some future
point.

It's called Kolaches or something of that sort ... main office in
Texas.  The one I went to was at 96th and Allisonville Road in Indy.

I tried one of their jalapeno kolaches and was I ever surprised!  I
thought they'd have little flecks of pepper in there.  NOPE!  The whole
thing stuck inside with some cheese to boot.  BOY was that good!
