This was tonight's dinner. I adapted the recipe from Forever Summer by Nigella Lawson. She uses 1 chile pepper for 1 serving (3 oz pasta). I made this for 4 servings so I used 3x as much garlic, and only a bit more oil and about the same amount of chile because I wasn't the only one eating this. It was perfect the way it was. Very good. We love simple pasta dishes like this. * Exported from MasterCook * Spaghetti Aglio Olio Pepperoncino Recipe By : adapted from Forever Summer by Nigella Lawson Serving Size : 4 Preparation Time :0:00 Categories : Main Dish Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- sea salt -- for water 1 lb spaghetti 5 tbsp extra-virgin olive oil 6 cloves garlic -- sliced thinly 2 pinches red pepper flakes salt and pepper Put a big pot of water on stovetop and bring to a boil. When it comes to a boil, add some salt and the spaghetti. Cook according to package directions. In last 3 minutes of cooking, heat another pan over medium heat. While it is still cold, add oil, garlic and red pepper flakes. Cook until garlic is lightly golden brown. Immediately add a spoonful of cooking water. Turn off heat and stir until the splattering stops. When pasta is done, drain well. Immediately put sauce over pasta and mix well. Optional: sprinkle on some freshly grated parmesan cheese to serve. Serve with warmed rolls or bread. - - - - - - - - - - - - - - - - - - NOTES : Nigella uses Maldon salt which is a coarse sea salt from England. If using this, use less as it is very salty and in very big crystals. You need less of it. She also used a dried chile pepper pod, but suggests the chile flakes if you don't have that.
