Did you see that the basic idea is the fish is cooked (that is, the proteins are denatured) not by heat but by the acidity of the citrus juice? As for the exact ingredients, you have to assume that would vary according to local or seasonal availability. > > I've only started to eat it in the last several years; before that, I was skeptical - you want me to eat a raw fish salad? Were it not for the chiles, I might not have tried it yet. A Have to admit now Alex that I am glad the List was more or less silent on the Ceviche issue. I have found out so much of interest, that I might not have found otherwise. I too was almost put off when I realised that the Fish. Or Prawns or whatever, was raw. I didnt think I could handle that. Sushi has always turned me right off. On reading deeper into the action of the Lime Juice on the fish, I have to admit that it is something that I have to try and know that it will become one of my favourites. Like you, without the chile Alex, I would pass it by. But then, what could I eat these days without chile? The list grows daily shorter, does the supply of chile, but hopefully that can be rectified. Hottest regards to y'all on the List. Walt. CH#2218. An old Chile-Head from the old country.
