Hi Jeremy, Well it sounds to me like you've done everything right so far. My advice is to go for it! The plants sound big enough & you say temps are high enough. My only advice is to be aware of stem strength....If you've ever bought a nursery grown pepper plant you'll have noticed how strong/stiff it is. If yours are not as strong (like mine always are!) I'd recommend planting them a little deeper than the current soil line level. And other than sheltering them in case of severe weather untill well established, you should be all set.
