[CH] Tonight's Dinner - Jalapeno Buffalo Burgers

A couple of weeks ago I found 1 lb packages of ground
buffalo at my supermarket and decided to buy one.
Tonight was the night to play around with it.

I made jalapeno buffalo burgers and they were
outstanding. Here is what I did:

                         Jalapeno Buffalo Burgers

   1      lb            ground buffalo meat
                        salt and pepper
   1                    jalapeno chile pepper --
sliced
   4      slices        red onion
   4      slices        Pepper Jack cheese
   4                    rolls -- large ones

For burgers: In large bowl, combine buffalo meat, salt
and pepper. Shape into 4 patties. Refrigerate until
ready to cook.

Preheat a cast iron skillet.  Cut rolls in half (or
pull apart). When the skillet is very hot, place
burger patties on and cook until medium-rare (about 8
minutes per burger).* Cook 2 burgers at a time so you
have some space in the pan to heat up 1/2 of the bun,
at least. Or you can toast the buns.

Place cheese on top of the burgers once you have
cooked the flip side to the extent you want. Then put
a cover on the pan and let the cheese melt. Remove
burger to bottom bun. Top with jalapenos and onion.
Place top of bun on burger.

Serve with french fries, corn on the cob, or any other
side dish you like with burgers.

NOTES : Risa's notes:

* This was how much it took for me. Could be longer,
for you, depending on how hot you get the skillet and
how thick the burgers are.

If you cannot get buffalo meat (I found it at my local
Shoprite, unusual as that is), then use your favorite
ground meat. Of course, they can be put on the
charcoal or gas grills.
