This was tonight's dinner - East-West BBQ Chicken. I had a whole chicken in the freezer and forgot to buy parts this past weekend. So, I took out the chicken and defrosted it. Left it in the refrigerator marinating while I took Trev to karate. Came home and had little time to get it on the table. I nuked it for awhile and then put it in a 400 degree oven for 30 minutes. We ate late but it was great. No real recipe. This is what I did: Mixed 1/4 cup hoisin sauce, 1/4 cup bbq sauce and 1 tbsp chili oil in a small bowl. Brushed 1/2 of the mixture on the top of the chicken, which was butterflied. Put it in a casserole dish that I rubbed with garlic oil. Put it in the microwave for about 10 minutes to start cooking it. Then I put it in a 400 degree oven for 30 minutes. Had to nuke it again for a couple of extra minutes because the leg was still a bit red when I cut into it (I have one of those battery operated forks and it works well but I wasn't happy with the blood coming out a bit).
