I was prowling the international aisle at my Giant Eagle grocery, and saw this new sauce in the La Preferida line: http://www.asiamex.com/tayabas/gensym-3157.html It's made with ancho chiles and is completley mild. This seems to be something I've been looking for, an enchilada sauce whose first ingredients are not water and flour :-/ So far I've only tasted a bit from a spoon, not a whole lot of flavor but I'm guessing it will open up a bit with cooking.
