OK, I won't explain how to clean pigeons here (contact me privately if you want to know). You only need the breasts. In a skillet, sautee' the breasts in lemon and butter. At this point, you could add some chilis, oregano, fresh cracked black pepper and garlic. When the breasts begin to brown, add shitake (or other mushrooms), a can of cream of mushroom soup, and white wine. Simmer, stir occasionally.
