James- there are several good places to eat in COS.  Highly recommended is
Estella's (mexican food) near Motor City.  Also, El Herradero, 2237 E.
Platte for the best mexican food I have had outside of Mexico. It is a
little bit of a dive from the outside, but worth it.  Also, there is a neat
little mexican grocery store right there, with all sorts of goodies.
Several Thai, Vietnamese and Korean restaurants around, all pretty good.
Some Thai and Korean grocery stores around, too.  Gourmet, but not chile
head, is the Briarhurst in Manitou Springs, although a bit on the $$$ side.
