	A friend of mine, who does way more smoking
	than I, mentioned once that some kind of apple
	wood leaves a bitter taste.  Can't remember if it
	was crab apple, hedge apple or what.  I will check
	it out.  It would be a pity to ruin good chiles with
	the wrong wood.
