I haven't tried the recipes but if you want something that will probably be good cold, I would say go with the "Grilled Chicken Breasts with Tequila, Citrus and Cilantro" (it sounds less messy). Again, since its cold, you may want to pre-slice it so it can be a "finger-food" - or so it can be part of a salad or pita/wrap style meal.
