Hello all, I have spent a great deal of time lurking on this list and want to thank you all for the great information I have gained. My oldest son is responsible for getting me interested in raising peppers. I have always enjoyed hot sauces, but with the exception of planting some jalepenos from time to time for salsa, I had never raised anything else untiol this year so I am quite a novice. This year I have planted 12 jalapeno plants, 3 Anaheims, 3 Big Jim Milds, 3 Hot Banana, 3 Filiur Blue Hot, 3 Hungarian Medium Hot, 3 Purple Serranos, 2 Hungarian Black, 3 Long Red Cayenne, 3 Super Chiles, 3 Habenaro. I intend on drying, freezing and pickling some, but I could use some suggestions and help on how best to use some of these kinds that I am less familiar with. I am interested in making some powders and dry rubs, but like many just starting out I want to try a little bit of everything. My son also wanted me to share his method of making what he calls "Power Brats". Marinate the forked Brats overnite in beer. Prepare the Brats on the grill as usual. He then slices into strips; fresh red and green bell peppers, habeneros, and jalepenos. He also adds some chiles, onions and sometimes mushrooms. Saute this combination in a mixture of tequila and jalapeno juice. Put your Brat in a big bun, use whatever other condiments you like and spoon the pepper mixture over the top. Retire to the family room to watch the football game, but not before grabbing at least two adult beverages as this is definitely a two beer sandwich.
