I find it very true that different chiles heat different parts of my mouth/throat consistently. Dan and I can sometimes use that method to identify what kinds of chiles are used in foods/sauces we eat when flavor or labels alone don't give it away. An even better method for us, however, is the Dan Sweat Chart. While no matter how hot, I never perspire from eating El Grande's sacred fruit (ok, sometimes a very light mist will form below my eyes--usually when I try to OD on my favorite Scotch Bonnets nibbled out of hand). But Dan has to carry a towel with him. And he sweats in different places of his body depending on the chile. Some affect his forehead, some the top of his head, some the back of his neck, and so on. I'm considering developing a poster...a Sweat-O-Graph :-). Does anyone else possess this "talent"?
