'Heads: Had a red and a green sala with chips at dinner last nite. We asked the ingredients and the red sauce had a pepper in it, like serrano, but called "Beak-of-the-bird." No, was not "pico de gallo." She said it was a "seco" serrano; whereas the serrano in the green sauce was "fresco". Does this - "seco" - mean it was a dried serrano, or a ripe one? The red *was* hotter than the green... Are serranos called "Beak of the bird" chiles, or was she referring to arbols???? Thanks! green
