Ron: This is a tomatillo salsa I just whipped up for a party a while ago. 1 lb. tomatillos, husked and diced small 1 or more habanero chiles, minced 1 medium onion, minced 3 cloves garlic, minced 1 sweet red bell pepper, diced small 2 tbsp. lime juice, or to taste salt to taste Combine all ingredients in a non-reactive bowl. Allow to sit, refrigerated, about 30 minutes before serving. This makes a rather chunky salsa; if you want it smoother, run all or part of the mix through a food processor on puree until you get the desired consistency. Jonathan
