[CH] Picking Chilis

My chilis, super chilis, and cayenne plants are loaded> I would like to
keep them producing to get as much product as possible. I remember
reading a suggestion t pick them early and allow them to ripen off the
plant so the plant will go on producing new peppers. When do I do this
and how long will they continue to ripen once picked? I'm a novice
trying to learn on the fly so any help will be appreciated.
