Actually this is not the case. Exposure to heat and oxygen pretty much destroys all vitamin C. Dried chiles, especially if ground, are a very poor source of vitamin C. On the other hand, vitamin A which is much more stable is actually concentrated to 5 to 10 times the amount present in fresh chiles. The solution?
