I just run a string thru the stems of cayenne-type chiles, then hang them on a wall inside, out of the sun. The AC keeps the humidity in the house low enough that they dry well enough to make powder. The added bonus is you can pick the peppers before they are completely ripe to encourage the plant to continue fruiting. For thick-walled chiles, (habs, anchos etc...) I use one of 2 electric dehydrators. One is a Mr. Coffee brand with a fan to help circulate air. It works very well. The other is an El-Cheapo ($9.95) from Big Lots. It has no fan and does OK, it just takes 6 - 12 hours longer than the Mr. C. I have it for backup/overflow situations. Scott... sure could use some rain around here... KCK
