They'll hang dry and make powder, but you can shred them while they're fresh too and you can use them as heat in pickles or if you have enough you can just pickle them. You hand most people a canning jar full of Peter Peppers just sort of laying in there looking back at them and, well, it makes some a might nervous. Especially if they're red. Beats me. carp
