Last night on Cooking Live Primetime on TV Food Network, Sara Moulton had Mark Miller on and a chef from Pointe-Of-View Restaurant. They made chile-related food and it all looked fabulous. I got a great tip from Mark Miller that I thought I would share. It is something related to what we were discussing a week or so ago, about coffee grinders and making powders. First the chefs all agreed that the use of a coffee grinder is the best item to use for grinding to a powder. They did it right there on TV too. But they also agreed that you should have a separate one just for chiles and spices. But if you make the mistake of using the coffee grinder that is just for coffee and you use it for chiles, this is the tip that Mark Miller gave: Pulverize 1/2 cup coarse salt in the coffee grinder and it will sop up all the chile oil left in the grinder. I went to the website to get the recipes and they still haven't put in the last 4 days worth of recipes for Cooking Live Primetime. Oooo - I have when they aren't up-to-date.
