Bigtom's recipe says, "You can add, subtract or change just about anything except the vinegar unless you are cutting the recipe in half. I would think you may be Ok to switch the vinegar to lime juice. I wouldn't combine the two, I think the vinegar would over power the lime. Since they are both acid it may work just fine.
