As threatened, here is the noodle dish, to accompany the Asian Garlic chicken dish...dont know what to call it, tempted to call it Doug's noodle, but some wag on this list, would certainly jump in on that one!Gareth???) 3/4 lb Shanghai noodles, or spagetti, soaked in hot water, and drained 1/2 lb fresh green beans, sliced about 3" lengths 1/2 white onion, cut into shreds 1 tbls Chinese black beans, rinsed 1 tbls Oyster sauce 1/4 cup chicken stock little cornstarch, in little water, 1 to 1 Peanut oil for stir frying Cover the green beans with boiling water, sprinkle in a little salt and let this sit...this will render the green beans, crisp, but not cooked Mix the stock, black beans, smashed, and oyter sauce together and retain..get the wok very hot, add a little peanut oil, and add the onion shreds, the drained green beans, and stir fry this for about 1 minute, stir frying all the time, then add the stock mixture, let this reduce a little, and add the noodles....for color, and flavor, I also added about a quarter of a red bell pepper, cut about the same size as the green beans....continue cooking this for about another minute, add salt or soy sauce, to taste, add a few drops of sesame oil, garnish with chopped scallion, and serve, with the aforementioned chicken dish...Limpy said it was tremendous, and I must trust her superior judgment! Cheers, Doug in BC
