Champignons are Mushrooms, yes. But the lingustical problem arises,
since Mushrooms also are Fungii in American. I Sweden we have a
zillion varieties of fungii, so we are very particular about
specifying what kind is used. To be frank, I think champignons are
quite boring comparably.
The buillon cube is the lazy way of making a "fond" or "foundation"
or whatever you call it. The "real" cook of course takes half a day
boiling a consommé out of the fish head and the rest of the unedible
parts with various spices.
