Howdy all, Just wanted to say what a great time I had in Jim's pepper fields. The hospitality and knowledge I recieved in those 2 days will keep my head and belly full for a long, long time. The Red Savinas are beautiful (and HOT!). I just finished chopping and destemming/seeding close to 20 pounds of them. Some for the freezer, some for mash, and the rest for the dehydrators (2 of them going full blast for probably the next week). My fingertips are burning and I am not allowed to come near my wife until I wipe my eyes with my hands without tearing or redness. It looks to be a while as these things just drip capsaicin. I'll probably have to dedicate my cutting board and ulu knife just to chopping my peppers. Looking forward to meeting more wonderful people from the list at other activities (and Jim's again next year). Everyone was great, with no macho posturing over who could eat the hottest peppers and such. Everyone tasted what they wanted and stayed clear of anything they felt uncomfortable with. The first thing I noticed was that even with a mouthful of incredibly hot substances... eyes tearing, noses running, and gasping for breath...
