Yeah, I tried some.  They had the texture and flavor of many organ type
meats, similar to turky giblets.  

No, I did not use any sauce, true BBQ junkies tend to avoid sauces in favor
of the taste of the smoked meats.  Sauce is often viewed as a way of hiding
mistakes.  If sauces are used they are often served separately as are the
various North Carolina vinegar/mustard based sauces.  Of course once the
base flavor of a particular session is noted there's no reason not to break
out the hot stuff!
