I made this chile powder a few days ago and finally used it tonight. My
burritos came out terrific because I sprinkled a little of this on the
filling before I rolled them up. Of course, you can use any HOT chile
you wish. I got the original recipe from my friend Sara in Vidalia, GA.
She used cayenne in her blend. I thought it was too mild for my tastes.
I used Aji Amarillo.

Homemade Hot Chile Powder

Amount Measure Ingredient -- Preparation Method

2 tbsp ground cumin
1 tsp Aji chile powder -- or other HOT chile
1 tbsp garlic powder
1 tbsp onion powder
1 tsp ground allspice
1 tsp ground cloves
1 tsp dried oregano -- crumbled
Mix all ingredients together in a small bowl. Place in an airtight
container. Should be good for about 6 months.
Use 1 tbsp per pound of meat in chili or stew. More if you like things
hot.
