I use an inexpensive Mr. Coffee dehydrator with excellent results.  The trays 
are shallow, so I cut the grid on one to open the tray height to a two tray 
level.  You probably would have to halve your larger peppers, but Serranos 
and most Habs fit quite nicely.
BTW, not affiliated with Mr. Coffee but affiliated with the late Joltin' Joe 
Dimaggio, and, by default as a Red Sox fan, affiliated with losing to Yankees.
