I had researched about a hundred jerky recipes and came up with this one. It is mostly like I found it except for the Hab powder and something else that I don't remember. For meat I wait until there is bottom round, or sirloin on sale than send the wife to market. She bats the baby blues at the butcher and asks for a nice 2" cut. They usually come out at about 5 pounds each. In all cases, I put the dried jerky in ziplock bags and keep it in the freezer. That way if it isn't dry enough it won't go bad. Tom MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: MARINATED SPICY JERKY Categories: Jerky Yield: 2 Pounds 5 lb Beef steak (Round, sirloin about 2" thick) 6 ts Salt 4 ts Pepper 4 ts Chili powder 4 ts Garlic powder 4 ts Onion powder 2 ts Cayenne pepper 1 tb Jim's Apple Smoked Habanero powder 2 ts Liquid smoke 1 c Water 3/4 c Soy sauce 1/2 c Worcestershire sauce Trim all fat off the meat and cut into 1/4" thick strips. Mix other ingredients together in a bowl. Add the meat and cover. Marinade overnight. or longer. Dry in dehydrator for 10 hours. Cool and bag it. MMMMM
