Did I miss something? I do not believe that anyone, while describing their own examples of Hunan whatever, explained to Sushi, where the designation came from, and why. I am not sure if Hunan Province and Szechuan Province are in a race for the hottest dish, I think they run pretty well neck and neck, and undoubtably, that is where the Hunan hand designation came from....anyone else?
