Just before Jack Frost makes his annual first visit to our garden we pick every thing in sight. Separating the Chiles into group according to type, we place them in paper grocery bags and leave the top open. Set the bags in a cool location (away from the wood stove or heat duct). So doing, we get about 2/3 of the green fruit to ripen and extend the harvest. Check the bags every 4-5 days and remove any soggy ones and or course the ripe ones too. It takes anywhere from 1 to 4 week, depending of the type or Chile, to complete the ripping process.
