I prefer the wider (1/2" noodles) if you use the thin ones 10 minutes soaking will do. We fixed Osso Bocco last night with fresh Porcini, White Flare Chiles, served over Milanese risotto. A nice bottle of Biale Zinfandel, Sonoma. Yes, it was divine! Tonight it's a ragout of rabbit (carrots, peter peppers, herbes, etc.) and fresh Porcini over freshly made Parpadelle. Ahh so many wonderful recipes to make, so many chiles to eat, and sooooo many wonderful wines to savor. Tonight it's Arrowwood Merlot. I stopped posting recipes as I wasn't sure anyone other than Doug was interested. I will gladly share the recipes with anyone seeking some wonderful food, but they are rarely quick and easy. Key word is fresh ingredients! Anything worth doing always takes a little time.............. Mary-Anne
